On today's episode, the dust has settled from March Madness and we had to speak with the Champion of it all, Penelope Wong of Yuan Wonton. There was no doubt they were a heavy favorite to make the Final Four, but the run didn't stop (and won't stop in 2023) there, Penelope & Ngockers jumped right back on the truck and have been slinging dank eats every week since.

We chat with Penelope about growing up in Colorado, traveling abroad & falling in love with food, Colorado's cuisine & obviously all the dumplings.. while she doesn't give us any recipes, she does give us insight as to when they will open their Brick n Mortar as well as how the rest of the spring/summer/year is gonna shake out!
