 Today’s Recipe: Grandkid-Approved Zucchini BrowniesIngredients:
  • 1 1/2 cups shredded zucchini
  • 3 tablespoons melted butter
  • 3 large eggs
  • 1 teaspoon homemade vanilla extract
  • 2/3 cup cocoa powder
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder
  • 3/4 cup chocolate chips
For the Frosting:
  • 3/4 cup chocolate chips
  • 3 tablespoons heavy whipping cream or milk
  Instructions:
  1. Preheat your oven to 350°F (175°C). Grease a 9x9 inch square baking pan.
  2. In a food processor, combine the shredded zucchini, melted butter, eggs, and vanilla extract. Blend until smooth.
  3. Add the cocoa powder, flour, salt, and baking powder to the food processor. Pulse until well combined.
  4. Stir in the chocolate chips.
  5. Pour the batter into the prepared baking pan and spread it evenly.
  6. Bake in the preheated oven for 25 to 30 minutes, or until a toothpick inserted into the center comes out clean.
  7. Allow the brownies to cool completely in the pan.
For the Frosting:
  1. In a microwave-safe bowl, combine the chocolate chips and heavy whipping cream.
  2. Microwave in 30-second intervals, stirring in between, until the chocolate is melted and smooth.
  3. Pour the melted chocolate over the cooled brownies and spread it evenly.
  4. Refrigerate the brownies for about an hour to allow the frosting to set.
  5. Cut into squares and serve.
Optional Garnishes:
  • Fresh strawberries, raspberries, or other fruits
  • Sugar decorations like flowers, stars, or hearts
