Today’s Recipe: Grandkid-Approved Zucchini BrowniesIngredients:
- 1 1/2 cups shredded zucchini
- 3 tablespoons melted butter
- 3 large eggs
- 1 teaspoon homemade vanilla extract
- 2/3 cup cocoa powder
- 1/2 cup all-purpose flour
- 1/2 teaspoon salt
- 1/2 teaspoon baking powder
- 3/4 cup chocolate chips
- 3/4 cup chocolate chips
- 3 tablespoons heavy whipping cream or milk
- Preheat your oven to 350°F (175°C). Grease a 9x9 inch square baking pan.
- In a food processor, combine the shredded zucchini, melted butter, eggs, and vanilla extract. Blend until smooth.
- Add the cocoa powder, flour, salt, and baking powder to the food processor. Pulse until well combined.
- Stir in the chocolate chips.
- Pour the batter into the prepared baking pan and spread it evenly.
- Bake in the preheated oven for 25 to 30 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the brownies to cool completely in the pan.
- In a microwave-safe bowl, combine the chocolate chips and heavy whipping cream.
- Microwave in 30-second intervals, stirring in between, until the chocolate is melted and smooth.
- Pour the melted chocolate over the cooled brownies and spread it evenly.
- Refrigerate the brownies for about an hour to allow the frosting to set.
- Cut into squares and serve.
- Fresh strawberries, raspberries, or other fruits
- Sugar decorations like flowers, stars, or hearts
