Today’s Recipes: Classic Ratatouille
RatatouilleIngredients:
- 2 tablespoons olive oil
- 1 medium onion, sliced
- 2 medium zucchini, chopped
- 1 medium eggplant, cubed (or 2 small ones)
- 4 large juicy tomatoes, chopped
- 1 green pepper, chopped
- 1 red pepper, chopped (you can also use yellow peppers)
- 2 cloves garlic, crushed
- 2 teaspoons Herbs de Provence (or any mixed herbs you prefer)
- Salt and pepper to taste
Instructions:
- Prep your ingredients:
- Begin by cutting all your vegetables (onion, zucchini, eggplant, tomatoes, and peppers) into bite-sized pieces.
- Note: Avoid cutting eggplant ahead of time as it can change color quickly.
- Start cooking:
- Heat 2 tablespoons of olive oil in a large Dutch oven (you can use cast iron or any large pot).
- Add sliced onions to the pot and sauté for a few minutes until they start to soften.
- Next, toss in the zucchini and cook for a couple of minutes.
- Add the remaining vegetables:
- Once the zucchini has softened, add the cubed eggplant and chopped tomatoes.
- Toss in the chopped green and red peppers (or any other color peppers you prefer).
- Simmer the ratatouille:
- Stir everything together and let it cook uncovered for about 20-25 minutes, stirring every 5 minutes to make sure nothing sticks to the bottom of the pot.
- Add garlic and herbs:
- After about 20 minutes of cooking, add the crushed garlic and Herbs de Provence.
- Stir well and let it cook for another 5-10 minutes until all the vegetables are tender and the flavors have melded together.
- Serve:
- Serve the ratatouille hot with some crusty bread, or on its own as a healthy, vegetable-packed meal.
