- 2 pounds of bok choy
- 1 tablespoon extra virgin olive oil
- 3 cloves of garlic, minced
- 2 large shallots, thinly sliced
- 2 tablespoons soy sauce
- 1 teaspoon toasted sesame oil (optional)
- Crushed red pepper to taste (optional)
- Heat a skillet over medium-high heat and add 1 tablespoon of extra virgin olive oil.
- While the skillet is heating, cut the bok choy into leaves or halves, depending on its size.
- Add minced garlic and thinly sliced shallots to the skillet and sauté for a couple of minutes until fragrant. Avoid overcooking.
- Add the bok choy to the skillet and stir-fry, coating it with the garlic and shallot mixture.
- Drizzle 2 tablespoons of soy sauce and 1 teaspoon of toasted sesame oil (if using) over the bok choy. Continue to stir-fry until the bok choy is tender and slightly wilted.
- If desired, sprinkle crushed red pepper over the bok choy for an added kick.
- Remove the cooked bok choy from the skillet and serve immediately. Enjoy this nutritious and flavorful dish!

- 1 cup dried cherries
- 1/2 cup old-fashioned oats (gluten-free, if preferred)
