12 FEB 2021 · Like dancers in a semi-circle around a fire. Crackling steps to the jumping hot flares of the amber burning timber. Fumes of burning fat and steaming fresh river water emanating from a row of freshly caught butterflied fish.
Today I want to talk about an important ritual of eating fish, commonly shared among family and friends, a national dish specialty of Iraqi fish…al Masgouf.
2 NOV 2020 · One of Iraq’s staple drink of all seasons and all times. A tradition of welcome that adds social value to our daily life, and gauges the degree of respect for any visitor.
A simple yet rich, dark red liquid that is brewed over the stove tops, or oil heaters..
A winter season comfort sip of bittersweet nectar steeped from the best harvested leaves, served in small, curvey, gold rimmed glass, sitting on a ceramic white or a clear saucer…
Let me take you on a journey of steeped tea in a glass… Istikan chai…
2 NOV 2020 · Let's celebrate a simple meal that has brought me and many Iraqis to our knees. A summer season specialty that brings the family together and stretches smiles across the faces in half moon crescent sugary delights, followed by a crunchy bite, with juices running down the sides of your face , then a spit out of black glossy seeds.. and then..a bite of jibin abyath, white cheese wrapped in khubuz, bread...the mighty, jibin wa raggi. Cheese and Watermelon!
